Tomato and Roasted Pepper Salad

  • 1 cup grape or cherry tomatoes, sliced in halves or quarters
  • 1 cup roasted red bell peppers (red, yellow, orange, or a mix)
  • 1 cucumber, cubed
  • 1 red onion, diced into medium chunks
  • 1 cup feta cheese crumbles or chunks
  • Half cup Balsamic vinaigrette
  • Half oz fresh basil leaves, minced (about 10-20 large leaves)
  • Juice and zest of 1 lemon
  1. Combine
  2. Eat
